Bavarian Style Kolsch

0.5 lb Munich Malt

0.5 lb 10L Crystal

1 Can Briess Pilsen Ale Malt LME

          2 lbs Pilsen Light DME

          1 oz Perle (Bittering 60-Min)

          1 oz Hallertau (Aroma 0-Min)

          1 tsp Irish Moss (Optional Clarifier-Sold Separately)

          Safale US-05

5 oz Priming Sugar

 

Directions:

          Put all grains into grain bag and put into 2 gallon of water and bring it to 150-160 degrees F and keep wort at this temp for 20-30 minutes, steeping the bag every few minutes. Remove grain bag and Sparge with warm water. Now bring water to a near boil. Remove boiling pot from heat and add extracts. Return to heat. When the wort starts to boil again, add bittering hops and boil for 45 minutes. After 45 minutes, add Irish moss (Optional Clarifier-Sold Separately) and boil for final 15 minutes. Turn off heat and add aroma hops. Let sit with lid on for 15 minutes and let steep. Mix hot wort with enough water to obtain 5.5 gallons of wort total volume (this helps when transferring later to secondary because you will have to add little to no additional water to obtain a full 5-gallons of beer). Cool wort to around 75 degrees and pitch yeast. Ferment for 5-7 days at around 67-72 degrees. Then transfer to secondary (top off if necessary to obtain 5 gallons). Let sit for a minimum of 2-4 weeks at fermentation temperatures to assure fermentation is complete. At this point, transfer into bottling bucket that has priming sugar dissolved in bottom (or even better keg in a soda keg). When the transfer is complete, bottle as normal. Let bottles sit for at least 3-4 weeks before drinking to ensure full carbonation. ENJOY!
