Ingredients

- 3.3 lbs. Sorghum Syrup
- 1 lb Caramel/Crystal Malt (60L)
- 1 lb Vienna Malt
- 4.4 lb Blackberry Puree
- 1 oz Cascade Hops (Bittering)
- 1 oz Amarillo Hops (Flavor)
- 1 oz Citra Hops (Aroma)
- 1 Packet Yeast Energizer / Irish Moss Combo Packet
- 1 Packet of Dry Ale Yeast
- 1 WLN4000 White Labs Clarity Ferm

Hop Schedule

- 60 minutes: 1 oz Cascade Hops (Bittering)
- 15 minutes: 1 oz Amarillo Hops (Flavor)
- 5 minutes: 1 oz Citra Hops (Aroma)

Instruction 

1. Begin by heating 3 gallons of water in a large pot to 155 degrees F.

2. Once the water is at temperature, add the grains to the pot and steep for 30 minutes.

3. After the grains have steeped, remove them from the pot and discard.

4. Add the malt extract to the pot and stir until it is completely dissolved.

5. Bring the mixture to a boil and add the bittering hops.

6. Boil for 45 minutes, stirring occasionally.

7. Add the flavor hops and boil for an additional 15 minutes stirring in the Fruit Puree and Yeast Energizer / Irish Moss Combo.

8. With 5 minutes left, add the aroma hops and stir for 5 minutes.

9. Remove the pot from the heat and cool the mixture to 70°F.

10. Transfer the mixture to a fermenter and add the yeast and WLN4000 Clarity Ferm. This will drop the gluten level below 10 ppm and is suitable for most people with gluten intolerance.

11. Seal the fermenter and allow the beer to ferment for 2 weeks.

12. After 2 weeks, bottle the beer with priming sugar and allow to condition for 2 weeks.

13. Enjoy your blackberry beer!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Blackberry Chonker Gluten Reduced Ale beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

Wort Chillers and Thermometers are long term investments. It is important to chill your Blackberry Chonker Gluten Reduced Ale wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.
