Your Day Cruiser Cream Ale Beer Kit is the perfect choice for any beer lover looking to craft a smooth and flavorful beer at home. This kit contains a blend of Pilsen Dry Malt Extract, Carapils Malt, Caramel 10L Malt, Flaked Maize, and the perfect selection of hops for a balanced bitterness and flavor. The Cascade Hops provide a slight bitterness, while the Centennial Hops add a hint of citrus and floral notes. The Willamette Hops provide a subtle aroma. To complete the kit, we include a Yeast Energizer / Irish Moss Combo Packet and a packet of Safale US-05 Dry Yeast. The Day Cruiser Cream Ale is the perfect choice for a smooth and easy drinking beer that is sure to please.

Ingredients 

- 5 lbs. Pilsen Dry Malt Extract
- 8 oz. Carapils Malt
- 8 oz. Caramel 10L Malt
- 1 lb. Flaked Maize
- 1 oz. Cascade Hops (Bittering)
- 1 oz. Centennial Hops (Flavor)
- 1 oz. Willamette Hops (Aroma)
- 1 Yeast Energizer / Irish Moss Combo Packet
- 1 packet of Safale US-05 Dry Yeast

Hop Schedule

- 1 oz. Cascade Hops (Bittering) - 60 minutes
- 1 oz. Centennial Hops (Flavor) - 15 minutes
- 1 oz. Willamette Hops (Aroma) - 5 minutes

Instruction 

1. Begin by heating 2-3 gallons of water to 155°F in a large pot.

2. Once the water has reached 155°F, turn off the heat and add the 8 oz. Carapils Malt, 8 oz. Caramel 10L Malt, and 1 lb. Flaked Maize into the grain bag.

3. Steep the grains in the water for 30 minutes using the muslin grain bag.

4. After 30 minutes, remove the grains from the water and discard.

5. Turn the heat back on and stir in the dry malt extract until fully dissolved. Bring the water to a rolling boil.

6. Once the water has reached a boil, add the 1 oz. Cascade Hops (Bittering).

7. After 45 minutes, add the 1 oz. Centennial Hops (Flavor) and boil for an additional 10 minutes. Add the Yeast Energizer / Irish Moss Combo at this point.

8. With 5 minutes remaining, add the 1 oz. Willamette Hops (Aroma).

9. After 5 minutes, turn off the heat and cool the wort to 70°F.

10. Once the wort has cooled to 70°F, transfer it to a fermenter and add the packet of Safale US-05 Dry Yeast. Add enough cool water to bring the total volume to 5 gallons.

11. Seal the fermenter and attach your airlock.

12. Place the fermenter in a cool, dark place and let it ferment for 2 weeks.

13. After 2 weeks, transfer the beer to a secondary fermenter and let it condition for an additional 2 weeks.

14. Mix in priming sugar and bottle the beer, allowing 2 weeks to carbonate.

15. After 2 weeks, the beer is ready to be enjoyed!

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Day Cruiser Cream Ale beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Day Cruiser Cream Ale is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Day Cruiser Cream Ale wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San. 

FermenterFermenters

The fermenter pictured here is standard for a 5 gallon beer kit.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your Day Cruiser Cream Ale over a few feet of unsanitary hose.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles. 

AirlocksAirlocks

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.   

6.5 stopperStoppers and Bungs 

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

When you bottle your Day Cruiser Cream Ale, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
