Your Midwest Moo Juice Milk Stout is a classic dark beer kit with a robust flavor and creamy finish. This kit contains 6 lbs of dark dry malt extract, 1 lb of roasted barley, 1 lb of chocolate malt, 8 oz of caramel/crystal malt, 8 oz of carapils malt, 1 lb of lactose, 1 oz of Fuggles hops for bittering, 1 oz of East Kent Goldings hops for flavor, and 1 oz of East Kent Goldings hops for aroma. The kit is completed with a yeast energizer/Irish moss combo packet and a packet of dry S-04 ale yeast.

This kit produces a beer with a deep, dark color and an intense, full-bodied flavor. The roasted barley and chocolate malt add a delicious, chocolaty taste, while the caramel/crystal malt gives the beer a smooth and slightly sweet flavor. The lactose adds a creamy finish and a slight sweetness that complements the other flavors. The Fuggles hops give the beer a balanced bitterness, while the East Kent Goldings hops provide a gentle floral and herbal aroma. When all of these flavors come together, you are sure to love the result of Midwest Moo Juice Milk Stout.

Ingredients   

- 6 lbs. Dark Dry Malt Extract
- 1 lb. Roasted Barley
- 1 lb. Chocolate Malt
- 8 oz. Caramel/Crystal Malt (80L)
- 8 oz. Carapils Malt
- 1 lb. Lactose
- 1 oz. Fuggles Hops (Bittering)
- 1 oz. East Kent Goldings Hops (Flavor)
- 1 oz. East Kent Goldings Hops (Aroma)
- 1 Yeast Energizer / Irish Moss Combo Packet
- 1 packet of Dry S-04 Ale Yeast

Hop Schedule 

- 1 oz. Fuggles Hops (Bittering) - Boil for 60 minutes
- 1 oz. East Kent Goldings Hops (Flavor) - Boil for 15 minutes
- 1 oz. East Kent Goldings Hops (Aroma) - Boil for 5 minutes

Instructions 

1. Begin by steeping the grains in 2-3 gallons of water at 155°F for 30 minutes.

2. After steeping, remove the grains and stir in 6 lbs Dry Malt Extract. (saving the lactose for later in the boil). Stir until fully dissolved.

3. Bring your wort to a rolling boil.

4. Add the Fuggles hops and boil for 60 minutes.

5. With 15 minutes left in the boil, add the 1 oz East Kent Goldings hops (Flavor). Add your Yeast Nutrient / Irish Moss Combo Packet at this point.

6. With 5 minutes left in the boil, add the other 1 oz East Kent Goldings hops (Aroma). Stir in the provided 1 lb Lactose until dissolved.

7. After 5 minutes, remove wort from heat.

8. Cool the wort to 70°F and transfer to a fermenter, topping up with cool water to reach five gallons.

9. Pitch the yeast and ferment at 68°F for 2 weeks.

10. Bottle or keg the beer and enjoy!

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Midwest Moo Juice Milk Stout beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Midwest Moo Juice Milk Stout is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

Wort Chillers and Thermometers are long term investments. It is important to chill your Midwest Moo Juice Milk Stout wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.
