Beer is made by fermenting the sugars extracted from malted barley (maltose). Malt is a general term used as an abbreviation for several things associated with maltose and malted barley. 

Malt extracts come in liquid and dry forms. Liquid malt extract (LME) is generally less expensive than dry, and it’s usually more readily available. Dry malt extract (DME), however, has a longer shelf life and is easier to measure out by weight for small applications such as yeast starters.
