INSTRUCTIONS

Prepare Equipment:
Sanitize all brewing equipment thoroughly.

Mash:
Heat 3.75 - 4.25 gallons of strike water to 168°F. *Adjust for your brew system's heat loss.*
Add crushed grains to your mash tun and maintain mash at 156°F for 60 minutes, stirring occasionally.

Sparge:
Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains, collecting about 6.5 gallons of pre-boil wort.

Boil:
Bring the wort to a rolling boil.
Boil for a total of 60 minutes.

Add hops at the following times:
- 1 oz Cascade hops (60 min boil)
- 1 oz Mt. Hood Hops (20 min boil)
- 1 oz Willamette Hops (5 min boil)

Cool and Transfer:
Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with clean, filtered water to exactly 5 gallons if needed.

Fermentation:
Pitch the yeast into the fermenter.
Ferment at 65°F for 10–14 days.
