The White Labs Ultra-Ferm 10mL is a liquid amyloglucosidase enzyme that is essential for the complete conversion of dextrins into fermentable glucose, making it a vital component in the brewing process. This enzyme, derived from a selected strain of Aspergillus niger, is perfect for brewing Brut-style beers and for the conversion of starch in adjuncts. It allows for total hydrolysis of dextrins to fermentable glucose from all types of starch, a process that traditional brewing methods only allow 75 to 80% conversion.
The White Labs Ultra-Ferm 10mL can be added to the brewhouse during mash-in, with recommended mash times between 1-4 hours. For shorter mash times, higher dosing rates are recommended. It operates optimally at a mash temperature of 131-140°F (55-60°C), and should not exceed 140°F (60°C) as the Amyloglucosidase can be completely denatured when the wort is held at 85˚C for 10 minutes. The optimal pH range for this enzyme is between 3.5 - 5.5.
For homebrewing, the recommended dosage is 10mL for 20L/5 gallons. The product should be stored at 39-46°F (4-8°C) and is stable for 12 months.
