Built on a robust foundation of 9 lbs of Briess Dark Dry Malt Extract (DME), this stout beer kit achieves deep malt complexity. Caramel/Crystal 60L malt adds a touch of sweetness, while chocolate malt and roasted barley impart intense roasted character and a smooth bitterness. Brown sugar (customer-supplied) enhances the body and depth, complementing the cocoa nibs and real vanilla beans (customer-supplied) for a subtle, lingering finish.

A precise hop schedule balances the malt richness. Warrior hops provide firm bitterness, while Chinook hops contribute earthy and piney flavors. The addition of Irish Moss and yeast energizer ensures a clean fermentation, while American Ale yeast delivers a well-attenuated and full-bodied result.

Fermentables:

9 lbs Briess Dark Dry Malt Extract (DME)

Specialty Grains: ***Combined in one bag***
1 lb Caramel/Crystal Malt 60L (steeping grain)
1 lb Chocolate Malt (steeping grain)
0.5 lb Roasted Barley (steeping grain)

Hops: ***Substitutions based on availability***
1 oz Warrior Hops (Bittering)
1 oz Saaz Hops (Flavor)

Yeast: ***Substitutions based on availability***

1 Packet SafAle US-05

Additives: 
1 lb Brown Sugar (customer supplied)
2 Vanilla Beans (split and scraped) (customer supplied)
4 oz Cocoa Nibs

5 oz. Priming Sugar
Muslin bags
Irish Moss/Energizer Combo Packet

HOPS SCHEDULE    

1 oz Warrior. Boil for 60 minutes.

1 oz Saaz Hops with 5 mins remaining in boil.

INSTRUCTIONS

Prepare Equipment:

Sanitize all brewing equipment thoroughly.

Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Steep Specialty Grains for 30 minutes. Remove grains.

Boil the Wort:
Add 9 lbs Dark DME and 1 lb Brown Sugar. Stir until dissolved.
Add 1 oz Warrior Hops. Boil for 60 minutes.
Add 1 Irish Moss/Energizer Combo Packet with 15 minutes remaining.
Add 1 oz Saaz Hops for the last 5 mins of the boil.

Chill and Ferment:

Cool wort to 68°F and top off with cool water to 5 gallons.
Pitch Yeast and ferment at 68°F for 10–14 days.
5 days before bottling, add the vanilla beans and cacao nibs to the fermenter.

Packaging:

Bottle with priming sugar or keg the beer, carbonating to approximately 2.5 volumes of CO2.
Allow the beer to condition for 2 weeks before serving.
