You’ll start your brewing journey with 7 lbs of Pale Malt (2-Row), which lays the foundation for that classic ale taste. The specialty grains, including 1 lb of Bonlander Munich Malt and a blend of Caramel/Crystal Malts at 40L and 120L, infuse your brew with layers of caramel sweetness and a touch of roasted complexity.

As you boil, 0.5 oz of Magnum Hops add a robust bitterness at the 60-minute mark, while 1 oz of Willamette Hops at 15 minutes before the end of the boil introduce a subtle, earthy aroma that complements the malt backbone. INGREDIENTS 

Grains:

7 lbs Pale Malt (2-Row)

Specialty Grains:
1 lb Bonlander Munich Malt
1 lb Caramel/Crystal Malt - 40L
0.5 lb Caramel/Crystal Malt - 120L

Hops:
0.5 oz Magnum Hops (60 min)
1 oz Willamette Hops (15 min)

Yeast:
1 packet Safale US-05 Ale Yeast

Also Included: 5 oz. Priming Sugar and muslin bags

HOPS SCHEDULE    

0.5 oz Magnum at 60 minutes (bittering).
1 oz Willamette at 15 minutes (flavor).

INSTRUCTIONS

Prepare Equipment:

Sanitize all brewing equipment thoroughly.

Mash:

Heat 3.5 gallons of water to 165°F.
Add crushed grains to your mash tun and mash at 152°F for 60 minutes, stirring occasionally.

Sparge:

Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains, collecting about 6.5 gallons of pre-boil wort.

Boil:

Bring the wort to a rolling boil.
Add hops at the specified times:
0.5 oz Magnum at 60 minutes (bittering).
1 oz Willamette at 15 minutes (flavor).
Boil for a total of 60 minutes.

Cool and Transfer:

Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with water to exactly 5 gallons.

Fermentation:

Pitch the Safale US-05 yeast into the fermenter.
Ferment at 68°F for 7–10 days.

Packaging:

Bottle with priming sugar or keg the beer, carbonating to approximately 2.5 volumes of CO2.
Allow the beer to condition for 2 weeks before serving.
