Kombucha is produced through using sugared tea and a symbiotic culture of bacteria and yeast, AKA Scoby, which is commonly called a "mother" or "mushroom." The yeast most often includes Saccharomyces cerevisiae in addition to other species which produce the alcohol. The bacterial component is most often Gluconacetobacter xylinus which oxidizes yeast produced alcohols to acetic acid. One of the reasons for the popularity of this drink are claims of probiotic properties.

This one gallon wide mouthed jug is perfect for making your Kombucha. For your initial ferment, simply cover it with some cheese cloth and a rubber band so gasses can escape.

Your Kombucha will require a short second ferment of 4-5 days. Screw cap bottles can be used with airlocks to allow gasses to escape and then replaced with screw caps for storage once the secondary process is complete. They come in a case of 12 and are handy if you like to make multiple batches or want give them away as gifts. Another option for bottling are flip top bottles if you want your Kombucha to be slightly effervescent. These can be used without the need for airlocks or stoppers. Just make sure you open them once per day during secondary to allow the gasses to escape.

This stopper is made for a 750 mL bottle. It can be used with a standard universal airlock to safely allow your Kombucha to gas out. Once finished, remove the airlock and replace with a screw cap.
