Ingredients
- 7 lbs. Light Dry Malt Extract
- 1 lb. Corn Sugar
- 0.5 lb. Biscuit Malt
- 0.5 lb. Honey Malt
- 0.5 lb. Caramel/Crystal Malt (20L)
- 0.5 lb. Carapils Malt
- 1 oz. Comet Hops (Bittering)
- 1 oz. Galaxy Hops (Flavor)
- 2 oz. Galaxy Hops (Aroma)
- 1 Yeast Energizer / Irish Moss Combo Packet
- 2 Packets of Dry Ale Yeast (US-05)
Hop Schedule
- 60 minutes: 1 oz. Comet Hops
- 15 minutes: 1 oz. Galaxy Hops
- 5 minutes: 2 oz. Galaxy Hops
Instructions
1. Heat 3 gallons of water to 155°F in a large pot.
2. Place the grains in a grain bag and steep for 30 minutes.
3. Remove the grain bag and discard the grains.
4. Add the malt extract with 1 lb. Corn Sugar and stir until completely dissolved. (do not include the 5 oz priming sugar that will be used for bottling later)
5. Bring the mixture to a boil.
6. Once boiling, add the Comet hops and set timer for 60 minutes.
7. With 15 minutes remaining in the boil, add 1 oz Galaxy hops. Add your Yeast Nutrient / Irish Moss Combo Packet at this point as well.
8. With 5 minutes remaining in the boil, add 2 oz Galaxy hops.
9. End boil and remove from heat.
10. Cool the mixture to 70°F.
11. Transfer the mixture to a fermenter and add enough cold water to make 5 gallons.
12. Pitch both packs of yeast and seal the fermenter.
13. Ferment at 68°F for 10-14 days.
14. Bottle or keg the beer with the priming sugar and allow 2 weeks to condition. Enjoy!
