Ingredients     

- 8 lbs. Light Dry Malt Extract
- 1 lb. Belgian Candi Sugar (Dark)
- 1 lb. Crystal Malt (60L)
- 2 lb. Munich Malt
- 1 lb. Cara-Pils Malt
- 8oz. Crystal 80L Malt
- 1 oz. Magnum Hops (Bittering)
- 1 oz. Cascade Hops (Flavor)
- 1 oz. Cascade Hops (Aroma)
- 1 Holiday Spice Packet (Bitter Orange Peel, Ginger Root, Card. Seeds, Cinnamon Sticks)
- 1 Yeast Energizer / Irish Moss Combo Packet
- 1 package of American Ale Yeast (US-05)

Hop Schedule   

- 60 minutes: 1 oz. Magnum (Bittering)
- 15 minutes: 1 oz. Cascade Hops (Flavor)
- 5 minutes: 1 oz. Cascade Hops (Aroma)

Instructions 

1. Bring at least 3.5 G of water up to 160 degrees F and steep specialty grains in muslin bag for a minimum of 20 minutes. Then          remove bag of grains pouring hot water over them and discard the muslin bag with the specialty grains. Do not squeeze bag.

2. Bring  water to a boil in a large pot.

3. Turn off the heat and add the 8 lbs. of Light Dry Malt Extract and 1 lb Belgian Candi Sugar, stirring until completely dissolved.

4. Turn the heat back on and bring the wort to a boil.

5. Once boiling, add 1 oz. of Magnum Hops (Bittering) and boil for 60 minutes.

6. After 30 minutes, add the 'holiday spice pack' in the muslin bag provided.

7. After 45 minutes, add Yeast Nutrient / Irish Moss Combo Pack and 1 oz. Cascade Hops.

8. After 55 minutes, add 1 oz. of Cascade Hops (Flavor).

9. Turn off the heat and cool the wort to 70°F.

10. Transfer the wort to a fermenter and add cold water to reach a total of 5 gallons.

11. Pitch the yeast and seal the fermenter.

12. Ferment at 68°F for 2-3 weeks.

13. After 2-3 weeks, rack the beer to a secondary fermenter and let it condition for 2 more weeks.

14. Bottle or keg your beer with the priming sugar and allow 4 weeks to condition, enjoy!

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Red Ryder Christmas Ale beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Red Ryder Christmas Ale is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Cryo Bout It IPA wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

The fermenter pictured here is standard for a 5 gallon beer kit.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your Red Ryder Christmas Ale over a few feet of unsanitary hose.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles.

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.   

6.5 stopperStoppers and Bungs 

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Stainless Steel Carboy and Bottle Washer is a convenient way of cleaning your bottles and/or carboys.  This high quality tool will come in handy.  Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.

When you bottle your Red Ryder Christmas Ale, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
