Next, you'll add 3 lbs. of Pilsen Light Dry Malt Extract. This is where the magic really starts to happen. The Pilsen malt extract adds a subtle complexity to your beer, enhancing the golden light malt with a hint of grainy sweetness.

Then, you'll dial in the flavor with 1 lb. of Flaked Maize. This ingredient is your secret weapon, adding a unique crispness and dryness to your beer that's as refreshing as a cool breeze on a hot day.

INGREDIENTS    

- 2 lbs. Golden Light Dry Malt Extract
- 3 lbs. Pilsen Light Dry Malt Extract
- 1 lb. Flaked Maize
- 1 lb. 2-Row Brewer's Malt
- 8 oz. Victory Malt
- 2 oz. Saaz Hops
- 1 oz. Hersbrucker Hops
- Yeast Energizer / Irish Moss Combo Packet
- 1 Packet of Dry Yeast (SafAle S-23)

HOPS SCHEDULE  

- 60 minutes: 1 oz. Saaz Hops (Bittering)
- 60 Minutes: 1 oz. Hersbrucker (Bittering)
- 20 minutes: 1 oz. Saaz Hops (Aroma)

INSTRUCTIONS

1. Heat 2-3 gallons of water to 155°F.
2. Place grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Stir in dry malt extracts and mix until evenly dissolved.
5. Bring wort to a rolling boil.
6. Add the hops according to the hop schedule.
7. Boil for 60 minutes, stirring occasionally.
8. At 15 minutes add Yeast Energizer / Irish Moss Combo Packet.
9. Terminate boil and cool the wort to 70°F.
10. Transfer the wort to a fermenter and top off with cold water to 5 gallons.
11. Pitch the yeast and seal the fermenter.
12. Ferment at 60-65°F for 14-21 days. (Or until fermentation is complete)
13. Transfer to a bottling bucket and stir in 5 oz. priming sugar. Mix until evenly distributed and bottle your beer.
14. Once bottled, allow 2 weeks for carbonation in a cool, dark room. Enjoy!

However, it is possible to collect a second or even third wash with the not quite spent grains as separate batches. Each run will produce a weaker wort and thus, a weaker beer. This process is known as the second (and third) runnings.
