Your Good Morning Dave IPA is a robust Amber Ale that packs an incredibly smooth and flavorful punch. With a light malt backbone from the Light Dry Malt Extract, Caramel/Crystal 40L Malt, Munich Malt, and Carapils Malt, this beer is sure to satisfy. The Magnum Hops used for bittering provide a subtle bitterness to the taste while the Comet Hops used for flavor and aroma provide a delightful citrus and floral flavor. Finally, the Centennial Hops used for dry hopping add a nice balance of earthy and herbal notes. Enjoy this beer with a nice steak dinner or sip it on its own for an unforgettable experience.

Ingredients

- 5 lb. Light dry Malt Extract
- 1 lb. Caramel/Crystal 40L Malt
- 1 lb. Munich Malt
- 1 lb. Carapils Malt
- 1 oz. Magnum Hops (Bittering)
- 2 oz. Comet Hops (Flavor)
- 1 oz. Comet Hops (Aroma)
- 1 oz. Centennial Hops (Dry Hop)
- 1 packet of American Dry Yeast (US-05)

Hop Schedule 

- 1 oz. Magnum Hops (Bittering) - Boil for 60 minutes
- 2 oz. Comet Hops (Flavor) - Boil for 30 minutes
- 1 oz. Comet Hops (Aroma) - Boil for 10 minutes
- 1 oz. Centennial Hops (Dry Hop)

Instruction 

1. Begin by bringing 2-3 gallons of water to a boil.

2. Add the specialty grains in the grain sock provided. Steep for approx. 30 mins

2. After 30 mins, add the 5 lbs. of Light Dry Malt Extract and 1 lb. Corn Suger and stir until completely dissolved.

4. Bring to a rolling boil.

3. Add the 1 oz. of Magnum Hops (Bittering) and boil for 60 minutes.

4. At the 30 minute remaining mark, add the 2 oz. of Comet Hops (Flavor) and stir until completely dissolved.

6. At the 10 minute mark, add the 1 oz. of Comet Hops (Aroma) and stir until completely dissolved. Add the yeast nutrient / irish moss combo at this point as well.

7. After the boil is complete, turn off the heat and cool the wort to 70°F.

8. Once cooled, transfer the wort to a fermenter and add cold water to bring the total volume to 5 gallons.

9. Pitch the yeast and seal the fermenter.

10. Ferment at 68°F for 7-10 days.

11. Transfer to a secondary fermentor and add Centennial Dry Hops. 7-10 Days.

11. Bottle or keg the beer and enjoy!

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Good Morning Dave IPA beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Good Morning Dave IPA is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Good Morning Dave IPA wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

The fermenter pictured here is standard for a 5 gallon beer kit.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your Good Morning Dave IPA over a few feet of unsanitary hose.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles. 

AirlocksAirlocks

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.   

6.5 stopperStoppers and Bungs 

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Stainless Steel Carboy and Bottle Washer is a convenient way of cleaning your bottles and/or carboys.  This high quality tool will come in handy.  Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.

When you bottle your Good Morning Dave IPA, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
