Your Island Hopper IPA is a full-bodied beer kit that is sure to please! With 6 lbs of light dry malt extract, a pound each of Munich malt, Caramel/Crystal 20L malt, and wheat malt, this kit will bring out the best in your beer. The combination of Centennial, Citra, Amarillo, Simcoe, and Mosaic hops will provide a unique and complex flavor profile, with a malty sweetness balanced by citrus and pine notes. A Yeast Energizer/Irish Moss Combo packet and a packet of Dry Ale Yeast will help bring out the flavor of this IPA and ensure a smooth finish. Ingredients   

- 6 lbs. Light Dry Malt Extract
- 1 lb. Munich Malt
- 1 lb. Caramel/Crystal 20L Malt
- 1 lb. Wheat Malt
- 1 oz. Centennial Hops
- 1 oz. Citra Hops
- 1 oz. Amarillo Hops
- 1 oz. Simcoe Hops
- 1 oz. Mosaic Hops
- 1 Yeast Energizer / Irish Moss Combo packet
- 1 packet of Dry Ale Yeast

Hop Schedule  

- 1 oz. Centennial Hops (60 minutes)
- 1 oz. Citra Hops (15 minutes)
- 1 oz. Amarillo Hops (15 minutes)
- 1 oz. Simcoe Hops (5 minutes)
- 1 oz. Mosaic Hops (5 minutes)

Instructions 

1. Begin by heating 3-4 gallons of water to 155°F.
2. Turn off heat and place the grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Add the liquid malt extract and stir until dissolved fully. Return heat and bring to a boil.
5. Once the wort is boiling, add the Centennial hops and boil for 60 minutes.
6. With 15 minutes left in the boil, add the Citra hops and yeast energizer/irish moss combo.
7. With 10 minutes left in the boil, add the Amarillo hops.
8. With 5 minutes left in the boil, add the Simcoe hops.
9. With 1 minute left in the boil, add the Mosaic hops.
10. Remove the pot from the heat and cool the wort to 70°F.
11. Transfer the wort to a fermenter and add enough cold water to make 5 gallons.
12. Pitch the yeast and ferment at 68°F for 2 weeks.
13. Bottle or keg the beer and enjoy!
