Your Summer Scorcher IPA is a bold and flavorful beer that is sure to get your taste buds tingling. This beer is made with 6 lbs. of light dry malt extract, 8 oz. of Caramel 10L, 8 oz. of Carapils Malt, 1 oz. East Kent Goldings Hops, 1 oz. Citra Hops, and 1 oz. Amarillo Hops. This combination of malts and hops give the beer its signature hoppy aroma and flavor. The beer is then finished off with a Yeast Energizer / Irish Moss Combo Packet and a Packet of Dry Yeast (Fermentis Safale US-05). To give the beer a unique flavor, 2 ounces of Habanero Flavoring and 2 ounces of Pineapple Flavoring are added to the mix. The result is a beer that has a bold hop flavor and aroma with a hint of citrus and tropical fruit. The habanero and pineapple flavors give the beer a slight spicy kick that will leave you wanting more. Enjoy this beer with your favorite summer meal for a truly unique experience.

Ingredients
- 6 lbs. Light Dry Malt Extract
- 8 oz. Caramel 10L
- 8 oz. Carapils Malt
- 1 oz East Kent Goldings Hops
- 1 oz. Citra Hops
- 1 oz. Amarillo Hops
- Yeast Energizer / Irish Moss Combo Packet
- 1 Packet Dry Yeast (Fermentis Safale US-05)
- 4 oz. Habanero Flavoring (Only Using 2 oz.)
- 4 oz. Pineapple Flavoring (Only using 2 oz.)
Hop Schedule
- 60 minutes: 1 oz. East Kent Goldings Hops (Bittering)
- 20 minutes: 1 oz. Citra Hops (Flavor)
- 5 minutes: 1 oz. Amarillo Hops (Aroma)
Instruction
1. Start by bringing 3 gallons of water to 155°F and turn off heat.
2. Put Caramel 10L and Carapils malt into muslin grain bag and steep in water for 30 minutes.
3. After 30 minutes remove grain bag and discard. Add the 6 lbs. of Light Dry Malt Extract and stir until fully dissolved.
4. Bring to boil and add the East Kent Goldings hops and set timer for 60 minutes.
5. At the 20 minute mark, add the Citra hops and Yeast Energizer / Irish Moss Combo Packet.
6. At the 5 minute mark, add the Amarillo hops and turn off the heat.
7. Cool the wort to 70°F and transfer wort to a sanitizedfermenter. Top up to 5 gallons with cool water and pitch yeast.
8. Allow to ferment at 68°F for 2 weeks or until fermentation is complete.
9. Once fermentation is complete, add 2 oz. each of Habanero and Pineapple flavoring. Now you can bottle or keg with priming sugar and allow two weeks to condition. Enjoy!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Summer Scorcher IPA beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.
When your Summer Scorcher IPA is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.
The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.
The pot pictured is an 8 gallon pot that is perfect for any beer kit or a standard 5 gallon batch.
Wort Chillers and Thermometers
Wort Chillers and Thermometers are long term investments. It is important to chill your Summer Scorcher IPA wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.
Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your Summer Scorcher IPA over a few feet of unsanitary hose.
Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles.
It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.
Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.
Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

When you bottle your Summer Scorcher IPA, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
