Your Strawberry Shortcake Shorty is a unique beer kit that is sure to tantalize the taste buds! This delightful pale ale is made with a blend of extra light dry malt extract, white wheat, Bonlander Munich 10°L, Caramel 10L malt, flaked oats, and Amarillo, Mosaic, Citra, and Simcoe hops. To give it an extra special twist, we've added lactose, strawberry and vanilla extract, and a Safale New England Ale yeast.
On the tongue, Strawberry Shortcake Shorty is a refreshingly light yet smooth beer. The initial flavor is a combination of biscuity malt, sweet vanilla, and juicy strawberry. As you savor the beer, the malt profile intensifies, giving way to a balanced hop bitterness. The beer finishes off with a subtle hint of sweetness from the lactose and extract. Ingredients
- 6 lbs Extra Light Dry Malt Extract
- 1 lb White Wheat
- 1 lb Bonlander Munich 10°L
- 1 lb Caramel 10L Malt
- 12 oz Flaked Oats
- 1 oz Amarillo Hops (60 mins)
- 1 oz Mosaic Hops (20 mins)
- 1 oz Citra Hops (20 mins)
- 1 oz Simcoe Hops (5 mins)
- 1 lb Lactose
- 1 Yeast Nutrient / Irish Moss Combo Packet
- 2 oz Strawberry Extract
- 2 oz Vanilla Extract
- 1 Package Safale New England Ale Yeast
Hop Schedule
- 1 oz Amarillo Hops (60 mins)
- 1 oz Mosaic Hops (20 mins)
- 1 oz Citra Hops (20 mins)
- 1 oz Simcoe Hops (5 mins)
Instructions
1. Begin by steeping the grains in 2-3 gallons of water heated to 155°F for 30 minutes.
2. After 30 minutes, remove the grains from the water and stir in the dry malt extract. Once completly dissolved, bring wort up to a gentle, rolling boil.
3. Once the wort reaches a boil add the first hop addition. Your 60 minute boil starts now.
4. Follow the hop schedule provided above.
4. With 15 minutes left in the boil, add the yeast energizer / irish moss combo pack and stir until dissolved. Add your 1 lb. lactose at this point.
7. Once the wort has finished boiling, remove from heat and cool to 70°F.
8. Top up with cool water to reach a total of 5 gallons and pitch your yeast.
9. Allow 7-10 days to ferment and transfer to a secondary fermenter.
10. After about a week, your beer should have dropped off most of it's sediment. Transfer to a bottling bucket and add 5 oz. priming sugar, 2 oz. vanilla, and 2 oz. strawberry extract. Stir untill evenly mixed and bottle your beer.
11. Allow 2 weeks to bottle condition in a cool, dark room. Enjoy!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Strawberry Shortcake Shorty beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.
When your Strawberry Shortcake Shorty is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.
The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers
Wort Chillers and Thermometers are long term investments. It is important to chill your Strawberry Shortcake Shorty wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.
Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles.
It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.
Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.
Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

When you bottle your Strawberry Shortcake Shorty, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
