Your Label Peelers Original Mad Cow Cream Stout Beer Kit has a smooth, full-bodied texture with a robust flavor profile. It has a creamy, caramel-like sweetness upfront and a hint of roasted coffee in the finish. The roasted malts provide a subtle smoky complexity and a slight bitterness that is balanced with a hint of creamy sweetness. The result is a rich, smooth and complex beer with a robust flavor that will satisfy any stout lover.

INGREDIENTS

  • 9 lbs. - Plain Amber DME
  • 1 lb - Caramel 60L Malt
  • 1 lb - Chocolate Malt
  • 8 oz - Roasted Barley
  • 4 oz - Black Malt
  • 1 oz - Warrior Hops (60 Mins Bittering)
  • 1 oz - Willamette (10 Mins Finishing)
  • 2 - Safale US-05
  • 5 oz - Priming Sugar
  • 2 - Muslin Bags
  • 1 lb - Lactose

DIRECTIONS

Heat 2-3 gallons of water up to 160 degrees F. Place crushed grains in the Muslin grain bag and let the grains steep for 30-40 minutes while keeping the temperature is around 160 degrees F. DO NOT boil grains or squeeze the bag once done steeping or you risk off flavors. Remove grains and hold them above wort and sparge with 2 gallons of warm water. Bring wort to near boil around 200 degrees F, turn heat off and add malt extracts (Liquid and Dry), including Lactose, while stirring well. When using Dry Malt Extract cut the entire top of the bag open and add quickly or it may clump up and will be harder to dissolve. Do not add malts while the heat is on because this could cause the batch to flash causing a boil over and quite the mess. Crank the heat back up and bring batch to a rolling boil. When the boil begins add bittering hops and boil for 45 min. Add Irish Moss for the last 15 minutes of the boil. (Irish Moss is optional but recommended for all homebrew to help with clarity. Irish Moss is sold separately.) Then add finishing hops and lactose for the final 10 minutes. When the 60 minute boil is complete remove pot from heat. Cool wort as quickly as possible using a wort chiller or ice break. Bring the temperature to 70-75 degrees and transfer into primary vessel and add enough water to bring the volume to 5.5 gallons. Take a hydrometer reading and check original gravity so that the alcohol content can be calculated when fermentation is complete. Pitch both packets of dry yeast and keep in the primary for 7-10 days. After 7-10 days transfer into a 5 gallon carboy and top up with water if necessary. Keep in the secondary for 3-4 weeks until fermentation is complete. Add the priming sugar and bottle. Naturally Carbonating takes approx. 2 weeks. Best if aged 2-3 months. Cheers!

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Mad Cow Cream Stout beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Mad Cow Cream Stout is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

Carboys   

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Mad Cow Cream Stout wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San. 

FermenterFermenters

The fermenter pictured here is standard for a 5 gallon beer kit.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your Mad Cow Cream Stout over a few feet of unsanitary hose.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles. 

AirlocksAirlocks

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.   

6.5 stopperStoppers and Bungs 

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

When you bottle your Mad Cow Cream Stout, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
