Ingredients

Extracts:

3 lbs Pale Malt Extract (DME)
2 lbs Light Dry Malt Extract (DME)

Specialty Grains:

0.5 lbs Carapils Malt

Hops:

1 oz Cryo Citra® Hops (15 min)
1 oz Cryo Mosaic® Hops (5 min)
1 oz Cryo Simcoe® Hops (Dry hop 3 days)

Yeast:

1 packet Safale US-05 Ale Yeast

Additives

5 oz Priming Sugar
1 Muslin Bag

Brewing Instructions

Prepare Equipment:

Sanitize all brewing equipment thoroughly.

Steep Specialty Grains:

Heat 2.5 gallons of water to 155°F.
Add Carapils Malt to a mesh bag and steep for 30 minutes.
Remove the grains, ensuring not to squeeze the bag to avoid extracting unwanted tannins.

Dissolve Extracts:

Remove the pot from heat and gradually stir in the LME and DME until fully dissolved.
Return to heat and bring to a boil.

Boil:

Add Cryo Citra® hops at 15 minutes for flavor.
Add Cryo Mosaic® hops at 5 minutes for aroma.
Boil for a total of 60 minutes.

Cool and Transfer:

Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter.

Fermentation:

Pitch the Safale US-05 yeast into the fermenter.
Ferment at 68°F for about two weeks.

Dry Hopping:

Add Cryo Simcoe® hops to the fermenter three days before the end of fermentation for additional aroma.

Packaging:

Carbonate to about 2.5 volumes of CO₂.
Bottle or keg the beer and allow it to condition for at least 2 weeks before serving.
