Your brewing journey begins with 9 lbs of Light Dry Malt Extract (DME), providing a solid foundation for the robust flavors to come. The addition of 1 lb of Carapils (Dextrin) Malt and 0.75 lb of Light Crystal Malt (20L) contributes to a smooth mouthfeel and a hint of sweetness that balances the intense hop character.

The hop schedule is where your Humboldt Clouds Double IPA truly shines. You'll start with 1 oz of Magnum Hops for a 60-minute boil, laying down a strong bitter base. As you progress, 1 oz of Columbus Hops at 30 minutes, 1 oz of Simcoe Hops at 15 minutes, and 1 oz of Chinook Hops at 10 minutes build layers of complexity with their earthy and piney notes. INGREDIENTS 

Malt Extracts:

- 1 oz Magnum Hops (60 min)
- 1 oz Columbus Hops (30 min)
- 1 oz Simcoe Hops (15 min)
- 1 oz Chinook Hops (10 min)
- 1 oz Amarillo Hops (0 min)
- 2 oz Mosaic Hops (Dry Hop for 5 days)
- 2 oz Cascade Hops (Dry Hop for 5 days)
- 2 oz Nelson Sauvin Hops (Dry Hop for 5 days)

HOPS SCHEDULE     

1 oz Magnum at 60 minutes (bittering).
1 oz Columbus at 30 minutes (bittering/flavor).
1 oz Simcoe at 15 minutes (flavor).
1 oz Chinook at 10 minutes (flavor/aroma).
1 oz Amarillo at flameout (aroma).

Dry Hopping:

Add 2 oz each of Mosaic, Cascade, and Nelson Sauvin hops directly to the fermenter after primary fermentation.
Let the beer sit for 5 days before packaging.

INSTRUCTIONS

1. Heat 2-3 gallons of water to 150°F. 
2. Place grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag, sparge (rinse) with warm water into the wort, and discard.
4. Add the malt extract and stir until fully dissolved.
5. Bring the wort to a rolling boil. 
6. Add the hops according to the hop schedule
7. Boil for 60 minutes, stirring occasionally.
8. At 15 minutes add Yeast Energizer / Irish Moss Combo Packet.
9. Cool the wort to 70°F. An immersion chiller or ice bath works well for this.
10. Transfer the wort to a sanitized fermenter and top off with clean, filtered water to 5 gallons. 
11. Pitch the yeast and seal the fermenter. 
12. Ferment at 68-70°F for 5-7 days.
13. Transfer into a secondary fermenter and add in the dry hop additions. Allow to dry hop for 5 days.
14. Transfer to a bottling bucket and stir in 5 oz. priming sugar. Mix until evenly distributed and bottle your beer.
15. Once bottled, allow 2 weeks for carbonation in a cool, dark room. Enjoy!
