Hops for Belgian ales and saisons: restrained bitterness with floral, spicy, herbal, or light citrus aroma so yeast esters and phenolics stay the focus. High-alpha bittering hops appear here mainly for clean kettle bitterness in small amounts.

Styrian Celeia, Saaz, Hallertau, Hersbrucker, Tettnang, UK Kent Goldings, UK Fuggle, Motueka, and similar aroma hops are typical; Magnum or Warrior can cover bittering when you want IBUs without adding much hop flavor.
