HOPS SCHEDULE
60 min: 1 oz Simcoe
15 min: 2 oz Citra

INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Steep Specialty Grains
3 gallons water, 155°F.
Steep Caramel 40 in muslin bag ~30 min.
Remove bag.
Boil & Hops
Off heat, stir in 12 lbs Pale DME.
Boil 60 min total:
60 min: 1 oz Simcoe
15 min: 2 oz Citra as well as Yeast Nutrient/Irish Moss Combo
5 min: 1 oz Citra
Ferment
Cool to 68°F, top to 5 gallons.
Pitch 2 packets American Ale Yeast.
Ferment ~2–3 weeks.
Packaging
Bottling:
Dissolve 5 oz sugar in boiling water, cool.
Rack onto sugar, fill bottles, cap.
3–4 weeks for disco fizz.
Kegging:
Transfer, purge CO₂.
12 PSI, 38°F, 3 weeks.
