Crafted with a balanced blend of wheat dry malt extract (DME) and light dry malt extract (DME), Hexenweizen Brau delivers a smooth malt backbone with a touch of natural sweetness. The addition of Munich malt (10 °L) deepens the malt complexity, lending subtle toasty undertones that enhance the classic wheat beer profile.
For hop character, Hallertauer Blanc hops (60 min) provide a delicate floral and fruity essence, complementing the esters produced by the WB-06 dry yeast. To elevate the flavor, sweet orange peel (added 10 minutes before the end of the boil) introduces a hint of citrus zest, brightening the finish with a refreshing tang.

2 lbs Light Dry Malt Extract (DME)
Specialty Grains:
1 lb Munich Malt (10 °L)
Hops:
1 oz Hallertauer Blanc (60 min)
Yeast:
WB-06 Yeast Changed liquid to dry yeast DH
Additives:
1 oz Sweet Orange Peel (10 min before end of boil)
Also Included: 5 oz. Priming Sugar and muslin bags
HOPS SCHEDULE
1 oz. Hallertauer Blanc hops 60 minutes (bittering).
INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Add Munich Malt (10 °L) to a mesh bag and steep for 30 minutes.
Remove the grains, ensuring not to squeeze the bag to avoid extracting unwanted tannins.
Dissolve Extracts:
Remove the pot from heat and gradually stir in the Wheat DME and Light DME until fully dissolved.
Return to heat and bring to a boil.
Boil:
Add Hallertauer Blanc hops at the start of the boil for bitterness.
Add sweet orange peel 10 minutes before the end of the boil for a modern citrus twist.
Boil for a total of 60 minutes.
Cool and Transfer:
Cool the wort to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter.
Fermentation:
Pitch the WB-06 yeast into the fermenter. Changed from liquid to dry yeast. We do not carry Wyeast
Ferment at 68°F for about two weeks, allowing the yeast to impart its characteristic banana and clove flavors.
Packaging:
Bottle with priming sugar or keg the beer, carbonating to approximately 2.5 volumes of CO2.
Allow the beer to condition for 2 weeks before serving.
