Benny's Red

Red IPA By Brian Stephens

Light, dry, and very easy to drink.  It's just bitter enough to be a Red IPA but incredibly crisp.

Brian runs a rabbit rescue and names most of his beers after the various rabbits that come in.  Benny (Bunjamin) was rescued from a hoarding situation with 152 other rabbits.  He's a sort of ginger looking dude which inspired a red ale/IPA!

Malt Bill (5 gallons)
  • 8# 2 row (71.4%)
  • 2# Vienna (17.9%)
  • 8oz Crystal 20 (4.5%)
  • 8oz Victory (4.5%)
  • 3oz Carafa Special III (dehusked) (1.8%)
Hops (60 minute boil)
  • .5oz Centennial @ 60
  • .5oz Centennial @ 30
  • 1oz Centennial @ Flame Out
  • 2oz Centennial Dry Hop 3 days before packaging
Yeast
  • WLP007 / Wyeast 1318 / Imperial Juice all work great
Notes:  Mash @ 152F for 60 minutes.  At 72% efficiency this works out to be about 5.2% which is just about right for some light outdoor drinking. (1.053 OG / 1.013 FG). The Estimated IBU's are right around 32 and the SRM is around 13.

Also, equal parts sulfate and chloride.  75ppm each with a target mash pH of 5.3.
