INGREDIENTS
- 9.9 lbs Extra Light Liquid Malt Extract
- 1 lb Pale Malt
- 1 lb Gambrinus Honey Malt
- 1 oz Warrior Hop Pellets (Add at the start of your boil, then boil for 60 Min)
- 1 oz Lemon Peel (add to your boil after 40 minutes)
- 1 oz Simcoe Hop Pellets (add to your boil after 45 minutes)
- 1 oz Simcoe Hop Pellets (add to your boil after 55 minutes)
- Priming Sugar 5oz
- Yeast: White Labs California Ale WLPD001 (This is the dry format of the flagship liquid WLP001)
DIRECTIONS
Put all grains into grain bag and put into 2 gallon of water. Bring to 150-160 degrees F and keep wort at this temp for 20-30 minutes, steeping the bag every few minutes. Remove grain bag and Sparge with warm water. Bring water to near boil. Remove boiling pot from heat and add malt extracts. Return to heat. When the wort starts to boil again, add bittering hops to large bag and FOLLOW HOP SCHEDULE ABOVE adding hops to the same large bag. After 45 minutes, add Irish moss (Optional Clarifier-Sold Separately) and boil for final 15 minutes. Mix hot wort with enough water to obtain 5 gals of wort total volume. Remove hops. Cool wort to around 75 degrees and pitch yeast*. Ferment for 5-7 days at around 65-75 degrees. Then transfer beer into secondary. Let sit for a minimum of 2-3 weeks at fermentation temperatures to assure fermentation is complete. Carefully transfer into bottling bucket that has priming sugar dissolved in bottom (or even better keg in a soda keg). When the transfer is complete, bottle as normal. Let bottles sit for at least 2-4 weeks before drinking to ensure full carbonation. Enjoy!
