Your brewing journey begins with 6.6 lbs. of Sorghum Extract, the gluten-free backbone of this ale. Add to that 1 lb. of Dark Belgian Candi Sugar and 2 lbs. of Brewers Best Honey, and you’ve got a sweet, rich base that’s ready to be transformed. The hops are where the magic starts to happen: 1 oz of Magnum Hops for a sturdy bitterness and 2 oz of Cascade Hops for a citrusy, floral finish.

But what’s a Christmas Ale without a little spice? This kit includes a Yeast Energizer and Irish Moss Combo Packet to keep your brew clear and lively, and a packet of Fermentis Safale US-05 Dry Yeast to get the fermentation party started. Then comes the holiday cheer: 1 oz of Sweet Orange Peel, 1 oz of Cinnamon Sticks, .5 oz of Ginger Root, 1 tsp of Cardamom Seeds, and 2 tsp of All Spice. Ingredients     

- 6.6 lbs. Sorghum Extract 
- 1 lb. Dark Belgian Candi Sugar
- 2 lb. Brewers Best Honey
- 1 oz Magnum Hops
- 2 oz. Cascade Hops
- Yeast Energizer / Irish Moss Combo Packet 
- 1 Packet Dry Yeast (Fermentis Safale US-05) 
- 1 oz Sweet Orange Peel
- 1 oz Cinnamon Sticks
- .5 oz. Ginger Root
- 1 tsp Cardamom Seeds
- 2 tsp All Spice

Hop Schedule   

- 60 minutes: 1 oz. Magnum Hops (Bittering) 
- 60 minutes: 1 oz. Cascade Hops (Bittering)
- 10 minutes: 1 oz. Cascade Hops (Aroma)

Instructions

1. Start by bringing 3 gallons of water to 155°F and turn off heat.
 
2. One the flame is off, mix in your fermentables until fully dissolved. Once dissolved return to heat.
 
3. Once your wort is up to a boil, set a one hour timer and follow the hop schedule listed above.
 
4. With 15 minutes remaining, add your Irish Moss / yeast nutrient pack as well as your spice pack inside of the provided grain bag. 
 
5. Once your 60 minutes is up, remove from heat and chill your wort to fermentation tempuratures.
 
6. Top up to 5 gallons with cool water and pitch yeast.
 
7. Allow to ferment at approximately 68°F for 2 weeks or until fermentation is complete.
 
8. Now you can bottle or keg by mixing in 5 oz. of priming sugar and allow two weeks to condition. Enjoy!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Exclusion Christmas Ale Gluten Free beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Exclusion Christmas Ale Gluten Free is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

Wort Chillers and Thermometers are long term investments. It is important to chill your Exclusion Christmas Ale Gluten Free wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Stainless Steel Carboy and Bottle Washer is a convenient way of cleaning your bottles and/or carboys.  This high quality tool will come in handy.  Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.

When you bottle your Exclusion Christmas Ale Gluten Free, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
