INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Add Rye Malt and Caramel/Crystal Malt - 60L to a mesh bag.
Steep for 20 minutes, then remove the bag and let it drain into the pot.
Dissolve Malt Extract:
Remove the pot from heat and stir in 6 lbs of Pale LME until fully dissolved.
Return the pot to heat and bring to a boil.
Boil:
Add hops at the specified times:
0.5 oz Magnum at 60 minutes (bittering).
1 oz Cascade at 15 minutes (flavor).
0.5 oz Citra at 5 minutes (aroma).
Boil for a total of 60 minutes.
Cool and Transfer:
Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with cold water to exactly 5 gallons.
Fermentation:
Pitch the Safale US-05 yeast into the fermenter.
Ferment at 68°F for 7–10 days.
Packaging:
Bottle with priming sugar or keg the beer, carbonating to approximately 2.5 volumes of CO2
Allow the beer to condition for 2 weeks before serving.

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Harvest Moon Rye Pale Ale Beer Kit beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.
