Your brewing adventure begins with 3.3 lbs of Dark Liquid Malt Extract (LME) and 2 lbs of Pale Dry Malt Extract (DME), forming the hearty backbone of this porter. These extracts lay the foundation for a rich, full-bodied beer that’s both satisfying and complex. As you dive deeper into the process, you’ll steep 1 lb of Chocolate Malt, which infuses the brew with its signature chocolatey essence, while 0.5 lb of Black Patent Malt adds depth and a touch of roasted character. The 0.5 lb of Caramel Malt - 80L rounds out the malt profile, contributing a subtle sweetness that balances the robust flavors. 

To elevate your Midnight Snack Porter, you’ll introduce 1 oz of Fuggle Hops during a 60-minute boil. This classic hop variety imparts a gentle bitterness that complements the malt’s richness without overpowering it, ensuring a harmonious blend of flavors. Finally, the magic of fermentation is brought to life with a packet of Safale S-04 Ale Yeast, which works diligently to transform your carefully selected ingredients into a smooth, velvety porter.

INGREDIENTS    

Extracts:
3.3 lbs Dark Liquid Malt Extract (LME)
2 lbs Pale Dry Malt Extract (DME)
Specialty Grains:
1 lb Chocolate Malt
0.5 lb Black Patent Malt
0.5 lb Caramel Malt - 80L
Hops:
1 oz Fuggle Hops (60 min)
Yeast:
1 packet Safale S-04 Ale Yeast

INSTRUCTIONS

Prepare Equipment:

Sanitize all brewing equipment thoroughly.
Steep Specialty Grains:

Heat 2.5 gallons of water to 155°F.
Add Chocolate Malt, Black Patent Malt, and Caramel Malt - 80L to a mesh bag.
Steep for 20 minutes, then remove the bag and let it drain into the pot.

Dissolve Extracts:

Remove the pot from heat and stir in the Dark LME and Pale DME until fully dissolved.
Return the pot to heat and bring to a boil.

Boil:

Add 1 oz Fuggle hops at the beginning of the boil.
Boil for a total of 60 minutes.
Cool and Transfer:

Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter.

Fermentation:

Pitch the Safale S-04 yeast into the fermenter.
Ferment at 68°F for 7–10 days.

Packaging:

Bottle or keg the beer, carbonating to approximately 2.5 volumes of CO₂.
Allow the beer to condition for 2 weeks before serving.

star sanSanitizer and Spray Bottle

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Midnight Snack Porter beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Midnight Snack Porter is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Midnight Snack Porter wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your  Midnight Snack Porter over a few feet of unsanitary hose.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles.

It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Stainless Steel Carboy and Bottle Washer is a convenient way of cleaning your bottles and/or carboys.  This high quality tool will come in handy.  Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.

When you bottle your Midnight Snack Porter, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.

At the end of summer, bines of hops are harvested and separated. To reduce moisture content, the hops are then spread out on the upper floor of an oast house and heated by heating units on the lower floor. Once dried, they are compressed into bales by a baler.
