Your brewing journey begins with 5 lbs. of Pilsen Dry Malt Extract, providing a solid foundation for your beer. To add a touch of sweetness and complexity, you'll incorporate 1 lb. of Simplicity Belgian Candi Sugar. The .5 lb. of Goldpils Vienna Malt and .5 lb. of Caramel Munich 60L Malt contribute to the rich, malty backbone of your brew.

The hop schedule is meticulously designed to balance bitterness and aroma. At the 60-minute mark, you'll add 1.5 oz. of UK Kent Golding Hops for a robust bittering effect. Then, with just 10 minutes left in the boil, you'll introduce .5 oz. of UK Kent Golding Hops to infuse your beer with delightful flavor and aroma.

To ensure a smooth fermentation process, the kit includes a Yeast Energizer and Irish Moss Combo Packet, along with a packet of Fermentis Safale BE-134 Dry Yeast. The addition of .5 oz. of Bitter Orange Peel imparts a subtle citrusy note, while the 5 ml. of Jack Herer Terpene Extract elevates the aroma to new heights, reminiscent of a walk through a pine forest.

Ingredients      

- 5 lbs. Pilsen Dry Malt Extract
- 1 lb. Simplicity Belgian Candi Sugar
- .5 lb. Goldpils Vienna Malt
- .5 lb. Caramel Munich 60L Malt 
- 2 oz. UK Kent Golding Hops
- Yeast Energizer / Irish Moss Combo Packet 
- 1 Packet Dry Yeast (Fermentis Safale BE-134) 
- .5 oz. Bitter Orange Peel
- 5 ml. Jack Herer Terpene Extract

Hop Schedule     

- 60 minutes: 1.5 oz. UK Kent Golding Hops (Bittering) 
- 10 minutes: .5 oz. UK Kent Golding Hops (Flavor / Aroma) 

Instructions

1. Heat 2-3 gallons of water to 155°F.
2. Remove from heat and place grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Bring the wort to a boil.
5. Once boiling, add the malt extract and Candi Syrup and stir until fully dissolved.
6. Add the hops according to the hop schedule.
7. Boil for 60 minutes, stirring occasionally.
8. At 15 minutes add Yeast Energizer / Irish Moss Combo Packet as well as the .5 oz of Bitter Orange Peel.
9. Cool the wort to 70°F.
10. Transfer the wort to a fermenter and top off with cold water to 5 gallons.
11. Pitch the yeast and seal the fermenter.
12. Ferment at 68-70°F for 10-14 days.
13. Transfer to a bottling bucket and stir in the 5 ml vial of Jack Herer terpene extract and 5 oz. of priming sugar. Mix until evenly distributed and bottle your beer.
14. Once bottled, allow 2 weeks for carbonation in a cool, dark room. Enjoy!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Rollin' Hills Terpene Saison beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Rollin' Hills Terpene Saison is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

Wort Chillers and Thermometers are long term investments. It is important to chill your Rollin' Hills Terpene Saison wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.
