Ingredients
Extracts and Honey:
- 7 lbs. Amber Dry Malt Extract
- 1.5 lbs. Natural Honey (added in last 15 mins of boil)
Specialty Grains: ***Combined into one bag***
- 1 lb. 2 Row Barley
- 1 lb. Crystal Malt (80L)
- 8 oz. Caramel/Crystal Malt (120L)
- 1 lb Flaked Oats
- 1 lb Flaked Rye
Hops: ***Substitutions based on availability***
- 1 oz. Magnum Hops (Bittering)
- 1 oz. Columbus Hops (Bittering)
- 1 oz. Hallertau Blanc Hops (Flavor)
- 1 oz. East Kent Golding Hops (Aroma)
Yeast: ***Substitutions based on availability***
- 1 pkg. Dry Ale Yeast (Nottingham) & EC-1118 (Champagne Yeast)

Hop Schedule
- Magnum and Columbus Hops (Bittering): 60 minutes
- Hallertau Blanc (Flavor): 15 minutes
- East Kent Golding Hops (Aroma): 5 minutes
Instructions
1. Heat 2-3 gallons of water to 155°F.
2. Place the grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard. Mix in malt extract (save the honey for last 15 minutes of boil) and stir until fully dissolved.
4. Bring the water to a boil.
5. Once boiling, add the Magnum and Columbus hops and boil for 60 minutes.
7. With 15 minutes left in the boil, add the Hallertau Blanc hops and Yeast Energizer / Irish Moss Combo Packet at this time. Add your honey and rinse the bottle with water and add to the boil to get all available sugars out. Stir until fully dissolved.
8. With 5 minutes left in the boil, add the East Kent Golding hops.
9. Terminate boil and cool the wort to 70°F. An immersion chiller or ice bath works well for this.
10. Transfer the wort to a sanitized fermenter and top off with cold water to 5 gallons.
11. Pitch the yeast (Nottingham and EC-1118) and ferment at 68°F for 14-21 days. This is a big beer and has a lot of fermenting to do.
12. After fermentation is complete, transfer to your bottling bucket with 5 oz of priming sugar. Make sure to mix until evenly dissolved but stir slowly to not introduce oxygen at this point in the process.
13. Bottle your beer and allow 2-3 weeks to carbonate at room temperature before serving. Enjoy!
