Your Night Ender Barleywine is a robust and complex beer kit comprised of 9 lbs. Light Dry Malt Extract, 1 lb. Caramel/Crystal Malt (60L), 1 lb. Munich Malt, 1 lb. 2 Row Malt, 1 lb. Honey Malt, 2 oz. Northern Brewer Hops (Bittering), 1 oz. Cascade Hops (Flavor), 1 oz. Cascade Hops (Aroma), 1 oz. Cascade Hops (Dry Hop), 1 Yeast Energizer / Irish Moss Combo Packet, and 2 pkg. Dry Ale Yeast. This delicious beer offers a rich, malty flavor with hints of caramel, honey and a touch of bitterness from the Northern Brewer Hops. The Cascade hops give the beer a citrusy aroma, while the Yeast Energizer and Irish Moss Combo Packet help to enhance the flavor and clarity of the beer. Ingredients   

- 9 lbs. Light Dry Malt Extract
- 1 lb. Caramel/Crystal Malt (60L)
- 1 lb. Munich Malt
- 1 lb. 2 Row Malt
- 1 lb. Honey Malt
- 2 oz. Northern Brewer Hops (Bittering)
- 1 oz. Cascade Hops (Flavor)
- 1 oz. Cascade Hops (Aroma)
- 1 oz. Cascade Hops (Dry Hop)
- 1 Yeast Energizer / Irish Moss Combo Packet
- 2 pkg. Dry Ale Yeast

Hop Schedule  

- 2 oz. Northern Brewer Hops (Bittering) - Boil for 60 minutes
- 1 oz. Cascade Hops (Flavor) - Boil for 15 minutes
- 1 oz. Cascade Hops (Aroma) - Boil for 5 minutes
- 1 oz. Cascade Hops (Dry Hop) - Secondary Fermentation

Instructions 

1. Begin by heating 3-4 gallons of water to 155°F.
2. Place the grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Add the malt extract and stir until completely dissolved.
5. Bring the wort to a boil and add the 2 oz. of Northern Brewer hops.
6. Boil for 60 minutes, adding 1 oz. Cascade hops at 45 minutes and 1 oz. Casade hops at 55 minutes.
7. Add the Yeast Energizer/Irish Moss Combo with 5 minutes remaining in the boil.
8. Terminate Boil and cool the wort to 70°F and transfer to a sanitized fermenter.
9. Pitch both packs of yeast and aerate the wort.
10. Ferment at 68°F for 7-10 days.
11. Rack the beer to a secondary fermenter with the remaining 1 oz of Cascade hops and allow to condition for 10-14 days.
12. Rack into a bottling bucket with priming sugar and ensure it is fully dissolved.
12. Bottle your beer and allow 14 days at room temp to carbonate.

Aging Instructions

This beer will benefit from aging. Allow the beer to condition in the bottle or keg for at least 6 months before drinking.
