This is Düsseldorf's signature German-style Brown Ale. The word "alt" translates to "old" in German, and traditionally Altbiers are conditioned for a longer than normal periods of time. Other sources note that "alt" is derived from the Latin word "altus," which means "high" and refers to the rising yeast. Take your pick, but the extended conditioning mellows out this ale's fruitiness and produces an exceptionally smooth, clean, and delicate brew. Its color ranges from amber to dark brown, carbonation is moderate, and while known to express the slightly spicy, herbal character of Noble hops, the key word here is balance.

Your Label Peelers Original version of this beer comes in at about 5.8% ABV and is designed to be a nice easy drinking brew. It's malt profile lends itself to the beers complexity but is subtle enough that your non-craft beer drinking friends will love it as well. Perle and Tettnang round out the hop bill with a hint of chocolate and Munich to add color and malt flavor.

Hops Schedule: 

 

 

 

- 60 Minutes: 1 oz. Pearl Hops (Bittering) 

 

- 20 Minutes: 1 oz. Perle Hops (Flavoring)

 

- 10 Minute: 1 oz. Tettnang Hops (Aroma)

 

 

 

 Instructions: 

 

 

 

1. Heat 2-3 gallons of water to 155°F. 
2. Remove from heat and place grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Bring the wort to a boil. 
5. Once boiling, Remove from heat. Add the malt extract and stir until fully dissolved. 
6. Return to heat and resume boiling.
7. Add the hops according to the hop schedule. 
8. Boil for 60 minutes, stirring occasionally.
9. With 15 minutes left in the boil, add Yeast Energizer / Irish Moss Combo Packet. (If Purchased)
10. Once boil is complete, cool the wort to 70°F. 
11. Pitch the yeast (2 Packs) and seal the fermenter. 
12. Ferment at 68-70°F for 10-14 days (or until fermentation is complete).
15. Once bottled, allow 2 weeks for carbonation in a cool, dark room. Enjoy!
