Ingredients

Extracts:
- 6 lbs. Light Dry Malt Extract

Specialty Grains: ***Combined into one bag***
- 8 oz. Caramel/Crystal Malt (60L)
- 8 oz. Bonlander Munich Malt
- 4 oz. Chocolate Malt
- 2 oz. Roasted Barley
- 2 oz. Briess Black Malt

Hops: ***Substitutions based on availability***
- 1 oz. Willamette Hops (Bittering)
- 1 oz. Cascade Hops (Flavor)
- 1 oz. Centennial Hops (Aroma)

Yeast: ***Substitutions based on availability***
- 1 packet of Safale US-05 Dry Yeast

Also Included:
- 5 oz. Priming Sugar
- 1 Yeast Energizer / Irish Moss Combo Packet
- Muslin Grain Bag
- 1 oz. Cinnimon Sticks (added for the last 5 minutes of the boil)

 

Hop Schedule   

- 1 oz. Willamette Hops (Bittering) - Boil for 60 minutes
- 1 oz. Cascade Hops (Flavor) - Boil for 15 minutes
- 1 oz. Centennial Hops (Aroma) - Boil for 5 minutes

Instructions

1. Begin by steeping the grains in 2-3 gallons of water at 155°F for 30 minutes.
2. Remove the grains and add in malt extracts and stir until dissolved.
3. Bring wort to a rolling boil.
4. Once boiling, add the Willamette hops and boil for 60 minutes.
5. After 45 minutes, add the Cascade hops and Irish Moss / Energizer Combo Packet and boil for 15 minutes.
6. After 50 minutes, add the Centennial hops.
7. After 55 minutes, add the Cinnimon Sticks and boil for 5 minutes.
8. After 60 minutes, remove from heat and cool to 70°F. An immersion chiller or ice bath works well for this.
9. Transfer the wort to a sanitized fermenter and add filtered water to reach 5 gallons total.
10. Pitch the yeast and ferment at 68°F for 7-10 days.
11. Bottle or keg the beer with priming sugar and allow two weeks to condition. Enjoy!
