You’ll start with 6 lbs of Light Dry Malt Extract, forming a clean, malty base; 1.5 lbs of Flaked Corn lends a touch of soft sweetness that lightens the body; 0.5 lb of Honey Malt adds depth and warmth, rounding out the flavor beautifully. For hops, Saaz provides balance and finesse: you’ll add 1 oz at 60 minutes for gentle bitterness, then 1 oz at 15 minutes to layer in that delicate floral aroma. Finally, American Ale Yeast ensures a clean fermentation, allowing the crisp, golden character of your Cream Ale to shine.

INGREDIENTS 

Extracts:
6 lbs Light Dry Malt Extract (DME)
Specialty Grains:
1.5 lbs Flaked Corn
0.5 lb Honey Malt
Hops: 1 oz
1 oz Saaz Hops (60 min)
1 oz Saaz Hops (15 min)
Yeast:
1 packet American Ale Yeast

HOPS SCHEDULE   

1 oz Saaz at 60 minutes (bittering).
1 oz Saaz at 5 minutes (flavor).

INSTRUCTIONS

Prepare Equipment:
Sanitize all brewing equipment thoroughly.

Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Add Flaked Corn and Honey Malt to a mesh bag.
Steep for 20 minutes, then remove the bag and let it drain into the pot.

Dissolve Malt Extract:
Remove the pot from heat and stir in 6 lbs of Light DME until fully dissolved.
Return the pot to heat and bring to a boil.

Boil:
Add hops at the following times:
1 oz Saaz at 60 minutes (bittering).
1 oz Saaz at 15 minutes (flavor).
Boil for a total of 60 minutes.

Cool and Transfer:
Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with cold water to exactly 5 gallons.

Fermentation:
Pitch the Wyeast yeast into the fermenter.
Ferment at 68°F for 7–10 days.

Packaging:
Bottle or keg the beer, carbonating to approximately 2.5 volumes of CO₂.
Allow the beer to condition for 2 weeks before serving.
