Briess Midnight Wheat Malt is a special dark malt that provides a roasted, chocolaty flavor and dark color to your beer. It's an essential ingredient for dark beers like stouts and porters, giving your beer a rich and complex flavor. With a color rating of 500-600 SRM, you'll get a deep beer color with no astringency or bitterness. You'll also add body and foam stability, making this a great choice for all your dark beer recipes. Briess Midnight Wheat is sure to give your beer an unbeatable depth and flavor.

Briess Midnight Wheat is an excellent malt for color with subtle, smooth flavor for Black IPAs, dark wheat beers and Schwarzbier. Use up to 10% for deep color plus mild, smooth flavor in porters and stouts. It imparts deep color with mild roasted/chocolate/coffee flavors.

STORAGE AND SHELF LIFE

Store in a temperate, low humidity, pest free environment at temperatures of <90 ºF. Improperly stored malts are prone to loss of freshness and flavor. Whole kernel diastatic and preground malts are best when used within 6 months from date of manufacture. Whole kernel roasted malts may begin experiencing a slight flavor loss after 18 months.

  • Flavor: Subtle, smooth. No bitter, astringent, dry flavors or aftertaste. Starts slightly sweet. Hints of roasted flavor. Finishes exceptionally clean. Midnight wheat is the smoothest source of black color of any malt available.
  • Color: Dark brown to black tones

CHARACTERISTICS / APPLICATIONS

  • Midnight Wheat Malt will contribute the same color characteristics as Black Malt but without the bitter, astringent, dry flavors or aftertaste.
  • Use as replacement to debittered black malt
  • Excellent in Black IPAs, Schwarzbiers, other dark ales and lagers and for color adjustment in any beer style

SUGGESTED USAGE LEVELS

  • 1-2% Minor color adjustment with little to no flavor impact in lighter colored lagers and ales
  • 2-5% Adds color with subtle, very smooth flavor
  • 5-7% Use in larger quantities for color plus hints of smooth roasted flavor

All that healthy yeast is going to make a lot of gas and you'll be needing an airlock to let it out, and not let anything in. It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

Making a yeast starter is a great way to avoid stuck fermentation and also get high yeast counts that allow the final cells to clean up after themselves, reducing off flavors and aromas.
