With an ABV of 8.0% and a commanding 100 IBU, this clone delivers assertive bitterness that’s perfectly balanced by a rich malt backbone and juicy hop character. The high BU/GU ratio of 1.25 ensures a crisp, lingering bite, ideal for hop lovers looking for complexity in every sip.

Malts:
12 lbs Pale Malt
1 lb Caramel 20L
1 lb Wheat Malt

Hops:
1.0 oz Columbus Hops (60 min)
1.0 oz Simcoe Hops (15 min)
1.0 oz Amarillo Hops (10 min)
1.0 oz Centennial Hops (5 min)
2.0 oz Simcoe Hops (Whirlpool)
2.0 oz Amarillo Hops (Whirlpool)
2.0 oz Centennial Hops (Dry Hop for 7 days)
2.0 oz Simcoe Hops (Dry Hop for 7 days)

HOPS SCHEDULE

1 oz Columbus Hops (Bittering) - 60 minutes
1 oz Simcoe Hops (Flavor) - 10 minutes
1 oz Amarillo Hops (Flavor) - 10 minutes
1 oz Simcoe Hops (Aroma) - Dry hop 5-7 days
1 oz Amarillo Hops (Aroma) - Flameout
1 oz Columbus Hops (Dry Hop) - Dry hop 5-7 days
1 oz Simcoe Hops (Dry Hop) - Dry hop 5-7 days
1 oz Amarillo Hops (Dry Hop) - Dry hop 5-7 days

INSTRUCTIONS

Steep Specialty Grains:

Heat 2.5 gallons of water to 155°F.
Steep Flaked Oats and Caramel/Crystal 40L malts in a grain bag for 30 minutes. Remove grains.

Boil the Wort:

Bring to a boil and add 9.9 lbs Golden Light LME. Stir until fully dissolved.
Add 1 oz Columbus Hops and boil for 60 minutes.
Add 1 tsp Irish Moss and 0.5 tsp Yeast Energizer with 15 minutes remaining.
Add 1 oz Simcoe and 1 oz Amarillo Hops with 10 minutes remaining.
Add 1 oz Simcoe and 1 oz Amarillo Hops at flameout.

Chill and Ferment:

Cool wort to 68°F and top off with water to achieve a total volume of 5 gallons.
Transfer to a sanitized fermenter and pitch American Ale Yeast.
Ferment at 68°F for 10–14 days.

Dry Hopping:

After primary fermentation, add 1 oz Columbus, 1 oz Simcoe, and 1 oz Amarillo Hops to the fermenter.
Allow to dry hop for 5–7 days.

Packaging

Dissolve 5 oz priming sugar in boiled water, cool, and evenly mix in.
Bottle or keg, condition for 2–3 weeks. Launch directly into your pint glass.
