With an ABV of 7.8% - 8.4% and a commanding 100 IBU, this clone delivers assertive bitterness that’s perfectly balanced by a rich malt backbone and juicy hop character. The high BU/GU ratio of 1.25 ensures a crisp, lingering bite, ideal for hop lovers looking for complexity in every sip.

Thanks to the generous use of Columbus, Simcoe, and Amarillo hops at every stage of the brewing process — from bittering to dry hopping — you can expect layers of flavor. Piney resin, bright grapefruit, ripe mango, and orange zest shine through, while the White Wheat Malt adds a smooth, silky mouthfeel. 12 lbs Pale Malt
1 lb Caramel 40L
1 lb White Wheat Malt

Hops: ***Substitutions based on availability***
1 oz Columbus Hops
5 oz Simcoe Hops (15 min)
3 oz Amarillo Hops (10 min)
3 oz Centennial Hops (5 min)

Yeast: ***Substitutions based on availability***
- Packet of Dry Yeast (SafAle US-05)

HOPS SCHEDULE

1.0 oz Columbus Hops (60 min)
1.0 oz Simcoe Hops (15 min)
1.0 oz Amarillo Hops (10 min)
1.0 oz Centennial Hops (5 min)
2.0 oz Simcoe Hops (Flame Out - 0 min)
2.0 oz Amarillo Hops (Flame Out - 0 min)
2.0 oz Centennial Hops (Dry Hop for 7 days)
2.0 oz Simcoe Hops (Dry Hop for 7 days)

INSTRUCTIONS

Mashing in:

Heat 3-4 gallons of water to 155°F.
Mash all grains for 60 minutes, stirring occasionally. Drain wort into boil kettle.
Sparge with 170°F water and collect enough runnings to arrive at 5 gallons post boil. (Adjust for your set-up)

Boil the Wort:

Bring to a boil and start timer for a 60 min boil when your first hop addition goes in. Stir until fully dissolved.
Add hops according to the hop schedule.

Chill and Ferment:

Cool wort to 68°F and top off with water to achieve a total volume of 5 gallons.
Transfer to a sanitized fermenter and pitch American Ale Yeast.
Ferment at 68°F for 10–14 days.

Dry Hopping:

After primary fermentation, transfer your brew into a secondary fermenter and add the dry hop additions.
Allow to dry hop for 5–7 days.

Packaging:

Dissolve 5 oz priming sugar in boiled water, cool, and evenly mix in.
Bottle or keg, condition for 2–3 weeks. Launch directly into your pint glass.
