Cryo Hops Simcoe delivers the iconic balance of pine, citrus, and tropical fruit that has made Simcoe one of the most influential hop varieties in modern craft brewing. Produced by Yakima Chief Hops using an advanced cryogenic separation process, Cryo Hops concentrate the lupulin glands while removing much of the leafy hop material. This results in a pellet with significantly higher concentrations of essential oils and alpha acids, providing more intense aroma, cleaner flavor, improved extraction efficiency, and reduced beer loss during dry hopping.

Flavor & Aroma Profile

Cryo Hops Simcoe is prized for its intensely layered aromas of pine resin, passion fruit, grapefruit, berry, and citrus, supported by notes of apricot, peach, earthy herbs, and subtle dankness. The concentrated lupulin profile delivers exceptional aroma saturation with minimal grassy or vegetal character. Whirlpool and dry hop additions produce a vibrant combination of resinous pine and juicy tropical fruit, creating the signature complexity that has made Simcoe a cornerstone of countless award winning IPAs.

Brewing Applications

Cryo Hops Simcoe is an outstanding choice for West Coast IPA, Hazy IPA, New England IPA, American IPA, Double IPA, Pale Ale, and Session IPA. Because Cryo Hops contain concentrated lupulin, brewers generally use 40 - 60% of the weight of standard T-90 pellets to achieve similar or greater aroma intensity, depending on the application. Simcoe pairs exceptionally well with Citra, Mosaic, Idaho 7, Centennial, Chinook, and Columbus, producing layered aromas of pine, citrus, tropical fruit, berry, and resin. It also complements Nelson Sauvin for brewers looking to add white grape complexity to hop forward beers.

Recommended Hop Substitutes

If Cryo Hops® Simcoe® is unavailable, consider:

  • Cryo Hops Mosaic – Complex berry, tropical fruit, and citrus character.
  • Cryo Hops Citra – Bright citrus and tropical fruit with exceptional aroma intensity.
  • Cryo Hops Idaho 7 – Tropical fruit balanced by resinous pine and citrus.
  • Cryo Hops Chinook – Bold pine and grapefruit with classic American hop character.
  • Simcoe Pellets – The traditional pellet format offering the same signature pine, citrus, and tropical fruit profile.

Technology & History

Cryo Hops were developed by Yakima Chief Hops to maximize hop flavor and aroma while improving brewing efficiency. Freshly kilned hop cones are processed using a proprietary cryogenic separation method that isolates the lupulin glands from much of the leafy bract material before pelletizing. This creates a concentrated pellet with substantially higher essential oil and alpha acid content than traditional T-90 pellets, delivering more intense hop expression while reducing trub formation, hop burn, and beer loss. Cryo Hops Simcoe has become one of the flagship products in the Cryo Hops lineup, giving brewers an efficient way to showcase the legendary pine, citrus, and tropical fruit character that has made Simcoe one of the world's most iconic hop varieties.
