1 oz Fuggles (60 min)
1 oz East Kent Goldings (15 min)

2 packets English Ale Yeast
Additives
5 oz Priming Sugar
1 Muslin Bag
Irish Moss Combo
Brewing Instructions
Prepare Equipment
Sanitize all brewing gear as if you’re polishing your steampunk goggles.
Steep Specialty Grains
Heat 3 gallons water to 155°F.
Steep Caramel 80 and Special Roast Malts in muslin bag for 30 minutes.
Remove grains without squeezing.
Boil & Hop Additions
Off heat, stir in 10 lbs Pale DME.
Boil for 60 minutes:
60 min: 1 oz Fuggles
15 min: 1 oz East Kent Goldings
Cool & Ferment
Chill wort to 68°F, transfer to fermenter.
Pitch 2 packets English Ale Yeast, let it time-travel for ~2–3 weeks.
Condition
Extend in secondary for a few extra weeks if you prefer an impeccably polished flavor profile.
Bottling:
Dissolve 5 oz sugar in boiling water; cool.
Rack onto solution, fill bottles, cap. Condition ~3–4 weeks.
Kegging:
Transfer to keg, purge with CO₂.
Carbonate at 12 PSI, 38°F for 3 weeks.
