Biscuit / Victory Malt

Biscuit and Victory malts are toasted malts that add warm, dry malt character and a distinct toasted complexity. They contribute light amber color along with flavors of fresh bread crust, crackers, and a subtle nuttiness.

These malts are not sweet like caramel malts, making them ideal for building structure and depth without adding residual sweetness. They are commonly used in pale ales, amber ales, and a wide range of malt-forward styles where a clean, toasty backbone enhances balance and drinkability.

Use a small addition (2–8% each) of Victory and Biscuit to layer warm honeyed-toasty and dry cracker/baked-bread notes. Victory softens the brew with rounded toffee and nutty sweetness while Biscuit adds crisp, savory crust character. Both are low in diastatic power, so include sufficient base malt for conversion
