Vienna Malt
Vienna malt is a lightly kilned base malt that bridges the gap between Pilsner and Munich. It provides fermentable sugars with enough enzymatic strength to support the mash, while adding more color and flavor than standard base malts. Compared with Munich malt, Vienna is kilned lighter and retains more of a delicate toasty/bready character rather than the richer, more pronounced toasted, biscuit, and bready-sweet flavors and deeper copper color typical of Munich. Use Vienna when you want gentle malt complexity and color enhancement without the heavier, more cake-like maltiness Munich contributes.
