Overview
You are not making a conventional Sangiovese. This Sangiovese Wine Kit, Novello is a specialty red designed to highlight brightness, freshness, and drinkability at the moment it is bottled. You choose this wine kit because you appreciate Sangiovese for its vibrancy and food friendly nature, expressed with clarity rather than weight.
Inspired by the Italian Novello style and produced from premium California varietal concentrates sourced from Lodi, your wine delivers a lively, fruit forward expression of Sangiovese. You experience bright red cherry, sour cherry, and raspberry, supported by subtle herbal notes and a gentle floral lift. The structure is intentionally restrained, your tannins are fine and approachable, the body lighter and agile, and the finish fresh, crisp, and precise.
A True Specialty Red
This is not a lighter version of a traditional Sangiovese, and it is not designed for aging. Your Novello wine exists within a narrow window of perfection, when acidity, aromatics, and fruit expression are in ideal balance.
Every decision behind this wine kit supports that goal. Controlled extraction, reduced oak influence, and a fermentation profile built to preserve aromatics allow Sangiovese’s natural brightness and savory character to shine without heaviness. You are crafting a red wine with a clearly defined identity and purpose, to be enjoyed young and without ceremony.
Lower Alcohol by Design
Your wine is intentionally produced at a lower alcohol level of 10 to 11 percent ABV. This is a deliberate stylistic choice that prioritizes balance, freshness, and drinkability.
This makes your Novello wine kit ideal if you enjoy vibrant, food friendly reds but wish to reduce your alcohol intake without sacrificing experience. You enjoy lifted fruit, lively acidity, and a clean finish without the fatigue often associated with higher alcohol wines.
Lower alcohol allows you to enjoy more than one glass while consuming less alcohol overall. You remain engaged with the wine, focused on flavor and balance rather than intensity.
Designed for Early Enjoyment
Traditional Novello wines rely on carbonic maceration. Your wine achieves its expression through a slower, gentler fermentation designed to preserve esters and limit tannin extraction. You are not copying a technique; you are honoring the outcome, a youthful red wine that is complete the moment it is finished.
You do not wait for this wine to come together. It arrives expressive, aromatic, and alive.
Serve Chilled
Novello wines are traditionally enjoyed slightly chilled, and your wine should be treated the same way. When you serve it at approximately 55°F or 13°C, you enhance aromatics, sharpen freshness, and keep the palate energized. Chilling is essential to experiencing the wine as intended.
This serving approach makes your Sangiovese Wine Kit, Novello exceptionally versatile. You pair it effortlessly with antipasti, pasta with tomato based sauces, pizza, grilled vegetables, and casual outdoor meals. It feels just as natural outdoors as it does at the table.
Storage Requirements
Your wine kit contains raw, cold stored juice concentrates and must be handled accordingly. If you are not ready to begin fermentation upon receipt, you must store the concentrate at 3 degrees C (38 F) or colder to maintain quality.
Proper storage ensures that the wine you make retains the aromatic precision and fruit purity that define the Novello style.

Aging Guidelines for This Wine Kit
Recommended aging: approximately 2 weeks to 3 months after completing the winemaking process. This wine is designed for youthful enjoyment, with vibrant fruit and an approachable structure. It needs little additional aging once finished. Extended cellaring can gradually diminish its fresh fruit character and lively aromas, reducing the qualities that make this style distinctive.

Thanks for the great tasting wines
"This is our second make of this novello series and Sangiovese wine kit. Our experience has been great. Label Peelers has been very helpful with their information and the kits are fun to make. Best of all, the resulting wine tastes great. We may never use another kit manufacturer. Looking for the day they bring Tempranillo, Gamay, and Barbera into their offerings."
Disappointing
"I’ve been making wine for 25 years—mostly Winexpert and R J Spagnols—and have always like the results. This is the first Novello kit I’ve made, although I’ve made a couple of Tavola kits, which turned out wonderfully—great body, color and flavor. I wasn’t expecting the same results from this, but I was at least hoping it would be as good or better than the other guys mentioned above. The color was very weak, the flavor was watery and had no depth. I’ll let it bottle age a couple of months and see if the flavor improves."
