"BOOSTING" GUIDE
If you're a fan of the Island Mist Series kits but like your wines a little bit stronger, consider "bumping" them with 1 pound of corn sugar and 1 liter of grape concentrate. The boosting of an Island Mist series kit is easy and brings the alcohol content to approx 9.5-10%. Simply adding corn sugar alone will boost the alcohol of your kit without adding body or mouthfeel to support this increase. Doing this will leave your wine tasting "hot" and unbalanced. The addition of white or red grape concentrate leaves your wine with more balance and produces a more enjoyable end product. Both the 1 lb corn sugar and 1 liter of grape concentrate should be mixed in stage 1 after adding your main juice pack and before topping up to the 6 gallon mark with water.
Aging Guidelines for This Wine Kit
Recommended aging: little or none once fermentation, clearing, and stabilization are complete. A resting period of approximately 2 to 4 weeks after bottling is a useful starting point for sampling. This style is intended for fresh fruit enjoyment. Extended aging can gradually reduce its vibrant fruit flavors and aromas, so enjoy it once it tastes settled and balanced.

"This will be the 8th time I am making this kit in the last 4 years of wine making. It is a staple at every party and everyone that tastes it loves it! I usually bump up the SG a little with 2 lbs of sugar in the primary. It's a great summer wine, but we drink it all year round. We never let this wine run out at our house!"

"I swear this wine kit was jinxed from the beginning. There was something wrong with the contents of my first kit, but after calling Label Peelers & Winexpert, it was replaced immediately. The second shipment arrived, but during transit became damaged and its contents spilled all over and through the bottom. Again, I contacted Label Peelers who immediately replaced it with a third kit. I felt terrible as this company lost money trying to get this kit to me promptly. There customer service is unbelievable let alone unbeatable! They care for their customers and make every effort to rectify the situation, even at their own expense. How many companies do you even find today that care?
