Always Amber Ale – Extract Edition invites you to craft a perfectly balanced amber ale with a rich malt character and a gentle hop presence. Picture a warm, coppery pint where caramel sweetness and toasty undertones come together in harmony; each sip reveals a smooth body, a hint of nutty depth, and a clean finish that leaves you ready for another taste.
Your foundation begins with 6 lbs of light dry malt extract, providing a smooth base for the malt-forward flavor profile. The specialty grains – 0.5 lb of Briess Munich Malt, 0.5 lb of Caramel/Crystal 60L, and 0.25 lb of Victory Malt – layer in a satisfying complexity: toasted bread, subtle caramel, and a soft nuttiness that defines the style.
Hops add balance and nuance. At 60 minutes, 1 oz of Cascade Hops lends a classic bitterness that supports the malt sweetness; 1 oz of Willamette Hops at 15 minutes brings gentle floral and earthy tones; and a final 1 oz of Cascade at flameout imparts a fragrant, citrusy aroma that completes the picture.
Fermented with American Ale Yeast, your brew will finish clean, clear, and exceptionally drinkable – a smooth amber ale that’s as rewarding to make as it is to share. HOPS SCHEDULE
1 oz Cascade Hops (60 min)
1 oz Willamette Hops (15 min)
1 oz Cascade Hops (0 min at flame out)
INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Add crushed Munich Malt, Caramel/Crystal Malt, and Victory Malt to a mesh bag and steep for 20 minutes.
Remove the grain bag and let it drain into the pot.
Dissolve Malt Extract:
Remove the pot from heat and stir in 6 lbs of Light DME until fully dissolved.
Return the pot to heat and bring to a boil.
Boil:
Add hops at the following times:
1 oz Cascade at 60 minutes (bittering).
1 oz Willamette at 15 minutes (flavor) and Irish Moss/Energizer Combo Packet.
1 oz Cascade at flameout (aroma).
Boil for a total of 60 minutes.
Cool and Transfer:
Rapidly cool the wort to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with clean, filtered water to exactly 5 gallons.
Fermentation:
Pitch the yeast into the fermenter.
Ferment at 68°F for 10–14 days or until fermentation is complete.
PACKAGING OPTIONS
Priming for Bottling:
Dissolve 5 oz of priming sugar in 2 cups boiling water.
Cool the sugar solution, then add it to a sanitized bottling bucket.
Transfer beer to the bucket, mix evenly, aerating your wort at this stage ensures a healthy fermentation, and bottle.
Condition bottles at room temperature for 2-3 weeks before chilling and serving.
Kegging:
Transfer the beer into a sanitized keg.
Seal and purge oxygen by burping the keg with CO₂.
Set the CO₂ regulator to 12 PSI and store at 38°F for 2-3 weeks.
