Apex Hard Seltzer Yeast is a powerful, fast-fermenting Saccharomyces bayanus strain developed by the University of Reims in Champagne-Ardenne specifically for high alcohol, low nutrient fermentations. Engineered to thrive in challenging environments with elevated ethanol and CO2 levels, this yeast is ideal for producing clean, crisp hard seltzers with exceptionally high attenuation and minimal off flavors. It is also highly effective for restarting stuck fermentations where standard brewing yeast may struggle.
This strain delivers a neutral fermentation profile with low sulphur production, no phenolic character, and medium ester expression, allowing fruit flavors, flavorings, and adjuncts to remain bright and unobstructed. With an alcohol tolerance up to 17% ABV and the ability to ferment down to an expected final gravity of 0.992, Apex Hard Seltzer Yeast produces dry, refreshing beverages with excellent stability and consistency. Proper nutrient supplementation is required for optimal performance.

Usage & Dosage
