Apex Cultures Glucoamylase Enzyme 1 Kg is a liquid brewing enzyme designed to create more fermentable wort by breaking down starches and dextrins into glucose that brewing yeast can readily consume. Unlike standard mash enzymes that can leave a portion of larger dextrins behind, glucoamylase hydrolyzes both alpha-1,4 and alpha-1,6 glucosidic bonds, allowing brewers to achieve greater attenuation, lower residual sugar, and a lighter, drier finished beer. This makes it especially useful for Brut and Dry IPAs, highly attenuated lagers, low carbohydrate or reduced calorie beers, and recipes containing significant amounts of adjuncts. It can also help improve utilization of available starch when greater conversion is desired. Derived from Aspergillus niger, Apex Glucoamylase gives professional and advanced homebrewers another way to control wort fermentability and final beer body through the mash rather than relying solely on yeast selection.
