Apex Cultures Alpha-Amylase Enzyme 1 Kg is a high performance, thermostable brewing enzyme designed to improve starch conversion during the mash, helping brewers increase extract yield and make more efficient use of malt and adjuncts. Derived from Bacillus licheniformis, this liquid alpha-amylase breaks large starch molecules into smaller carbohydrates that can be further converted into fermentable sugars by other mash enzymes. Its high temperature tolerance makes it particularly useful for adjunct heavy recipes and brewing processes where the natural enzyme content of the grist may be insufficient for complete conversion. For commercial breweries, Alpha-Amylase can improve raw material utilization and provide greater flexibility when formulating recipes with corn, rice, and other starch rich adjuncts, while homebrewers can use it to assist conversion in challenging grain bills. Unlike glucoamylase, which further breaks dextrins down into glucose to produce exceptionally dry beer, alpha-amylase primarily assists the earlier stages of starch breakdown during mashing.
