The active ingredient in this product is alpha-acetolactate decarboxylase, derived from a specially selected strain of Bacillus subtilis. This enzyme works by converting alpha-acetolactate into acetoin and carbon dioxide, effectively eliminating the formation of off-flavor causing vicinal diketones like diacetyl and 2,3-pentanedione outside the yeast cell. The result is a smoother, more enjoyable beer with a consistent flavor quality, whether you're brewing dry hopped or non-dry hopped varieties.
Not only does DiaBlast Pro™ ALDC Enzyme improve the taste of your beer, but it also increases your brewing efficiency. By enabling shorter fermentation cycles, it reduces maturation and conditioning time, speeding up production. Plus, it can save energy by reducing the cooling requirements for beer production.
Dosage instructions are straightforward: the recommended dosage rate is 2-5g/hl pre-fermentation and 1-2g/hl post-fermentation. The optimal temperature for use is between 50-158°F (10-70°C), and it functions effectively within a pH range of 3.0 - 7.5.
