With a robust foundation of 8 lbs. Light Dry Malt Extract, Krampus Christmas Ale is brought to life by the addition of 1 lb. Belgian Candi Sugar (Dark), imparting a rich, caramel sweetness. The malty ensemble is completed by 8 oz. Chocolate Malt, 2 lb. Munich Malt, 1 lb. Cara-Pils Malt, and 8 oz. Crystal 80L Malt, all working in harmony to create a velvety, toasty profile. The hop lineup features 1 oz. Magnum Hops for a balancing bitter backbone, while 1 oz. Cascade Hops (flavor) and 1 oz. Cascade Hops (aroma) contribute a delicate citrus essence, ensuring a well-rounded brew.

For a little backstory on the name, Krampus is a mythical creature from Germanic folklore who is said to punish naughty children during the Christmas season. He is usually depicted as a hairy, horned creature with cloven hooves, and sometimes a long tongue. According to legend, Krampus is the son of Hel, a Norse goddess of death and the underworld. He is said to accompany Saint Nicholas during the Christmas season, punishing misbehaving children by beating them with birch branches and carrying them off in a basket to his lair in the mountains. Ingredients     

- 8 lbs. Light Dry Malt Extract
- 1 lb. Belgian Candi Sugar (Dark)
- 8 oz. Chocolate Malt
- 2 lb. Munich Malt
- 1 lb. Cara-Pils Malt
- 8 oz. Crystal 80L Malt
- 1 oz. Magnum Hops (Bittering)
- 1 oz. Cascade Hops (Flavor)
- 1 oz. Cascade Hops (Aroma)
- 1 Holiday Spice Packet
- 1 Yeast Energizer / Irish Moss Combo Packet
- 1 package of American Ale Yeast (Belgian T-58)

Hop Schedule   

- 60 minutes: 1 oz. Magnum (Bittering)
- 15 minutes: 1 oz. Cascade Hops (Flavor)
- 5 minutes: 1 oz. Cascade Hops (Aroma)

Instructions

1. Begin by heating 2-3 gallons of water to 155°F.

2. Once the water is at 155°F, add the grains to the grain bag.

3. Allow the grains to steep for 30 minutes in the water, stirring occasionally.

4. After 30 minutes, remove the grains from the water and discard.

5. Stir in malt extract until completely dissolved. Bring your wort up to a rolling boil.

6. Once the wort is boiling, add the hops according to the hop schedule above.

7. With 15 minutes remaining, add the Yeast Energizer /Irish Moss Combo Packet, Spice Pack, cinnamon stick, and candi sugar

8. After 60 minutes, turn off the heat and cool the wort to 70°F.

9. Once the wort is cooled, transfer it to a fermenter, top up to 5 gallons with cool water and add the yeast.

10. Ferment at 68°F for two weeks.

11. After two weeks, bottle or keg with the priming sugar and allow 2 weeks to condition. Enjoy!
