TECHNICAL DESCRIPTION

Active Lager Berlin is a yeast for bottom fermentation, specially selected for the production of Pils or Lager type beers.

The origin is German University in Berlin. The sedimentation capacity is high and characteristic for the production of a lager rich in esters with fruity characters. Attenuation
degree: approximately 80-85%.

COMPOSITION AND TECHNICAL CHARACTERISTICS

Yeast (Saccharomyces Cerevisiae)

  • Dry matter: 95%
  • Live yeast cells: >1x109/g
  • Wild yeast: Abs
  • Total Bacteria: <3/mL*
  • Lacto Bacteria: <1/mL*

*when dry yeast is pitched at 100 g/hL i.e. >6x106 viable cells/mL.

DOSAGE

Rehydration agent depending on fermentation temperature. The lower the temperature, the higher the
recommended dosage in g/hL. This ranges from 53-59°F up to 80-100 g/hL, at low temperatures 50-
53°F up to 150 g/hL.

INSTRUCTIONS FOR USE

Mix the yeast into sterile wort or water at a ratio of 1:10 to 20 by weight for approx. 30 min. to obtain a creamy mixture. Agitate gently at a temperature of approx. 64-68°F. Dose the creamy slurry directly into the fermentation tank, if possible using a continuous dosing system. It is also possible to dose the yeast directly into the vessel evenly on the surface of the wort at the beginning of transfer from the whirlpool, thus creating a mixture with the wort. Temperature: standard temperature 50 59°F. It is also possible to vary the temperature during fermentation, esters at lower temperatures, diacetyl at higher 57°F temperatures. Fermentation temperature plays a crucial role in the flavour profile of finished beer.

STORAGE AND PACKAGING

Store in the original sealed packaging, away from light, in a dry and odorless place. Store preferably at a temperature <68°F. Do not freeze. Best before the date on the packaging. Use immediately after opening.

The pot pictured is an 8 gallon pot that is perfect for a beer kit or a standard 5 gallon batch.

wart-chiller.pngWort Chillers and Thermometers

Wort Chillers and Thermometers are long term investments. It is important to chill your wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer because high powered boiling changes more rapid temperature fluctuations.

SiphonsSiphons

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without one again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

FermenterFermenters

If you are using Apex Cultures Dry Brewing Yeast 500g Berlin Lager, you are getting ready to ferment some beer. Here's a link to our fermenter equipment.

minijet-tubing-34987-97929.jpgHoses

Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making.

Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles.

AirlocksAirlocks

All that healthy yeast is going to make a lot of gas especially with the high activity of Apex Cultures Dry Brewing Yeast 500g Berlin Lager. You'll be needing an airlock to let it out, and not let anything in. It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

yeast-starter.pngYeast Starters

Making a yeast starter is a great way to avoid stuck fermentation and also get high yeast counts that allow the final cells to clean up after themselves, reducing off flavors and aromas. Higher populations means less yeast stress and less risk of off-flavors.  They help make better beer and can be used with Apex Cultures Dry Brewing Yeast 500g Berlin Lager. Use the right equipment to make the job easy.
