Briess Vienna Malt is a traditional European style base malt that delivers a rich golden color and a smooth, malty character. Produced from premium North American 2-row barley, it is kilned longer than Pilsen or Brewers Malt to develop flavors of lightly toasted bread, honey, biscuit, and sweet grain. The result is a versatile malt that adds depth and complexity while maintaining a clean, balanced finish.
In the brewing process, Vienna Malt serves as both a base malt and a flavor enhancing malt. It contributes a deeper malt backbone than standard 2-row or Pilsen malt while retaining sufficient enzymatic power for starch conversion. Its rich yet approachable flavor profile makes it ideal for Vienna Lagers, Märzens, Oktoberfests, Amber Lagers, Blonde Ales, Kölsch, Bocks, and a variety of malt forward ales and lagers. It can be used as the primary base malt or blended with lighter malts to build additional complexity.
What makes Briess Vienna Malt unique compared to Briess Brewers Malt and Briess Pilsen Malt is its enhanced kilning and richer malt character. Compared to Bonlander Munich Malt, Vienna Malt is lighter in color and flavor, offering a cleaner, more delicate malt expression while still enhancing body and malt richness. Brewers often choose Vienna Malt when they want more malt character than a standard base malt can provide without the heavier toast and richness of Munich malt.
While primarily intended for brewing, Vienna Malt can also be used in craft distilling applications where a richer grain profile and subtle malt sweetness are desired.
